More Delights and Dream Making at the Stanley Marketplace

“We need to have a brainstorming meeting and I think it would help if we get out of the office to have it. I know, let’s go try Maria Empanada at Stanley Market Place and see if that provides some inspiration” goes a recent conversation in the NPRE office.  Win Win!

That’s the beauty of having Stanley Marketplace nearby to Stapleton Neighborhood— you can hop on over in a split second and the dynamic, can do spirit of the place provides positive energy.

The lunch meeting took place between Tiffany Mayor Burke – marketing, Megan Davis – office manager and Wendy Largey – Design-to-Sell expert and the topic is irrelevant but the lunch certainly wasn’t. It was a first time visit to Maria Empanada and we all found the location with ease.

To prepare and to understand what exactly an empanada is…I read Lorena Cantarovici’s story on the Maria Empanada website. It’s an amazingly heartwarming story of finding your passion and making it happen. It started with a dream to share the delicious treats from her childhood in Buenos Aires and the steps that she took to bring those memories to Denver. Empanada’s are not a burrito, not a calzone, not a meat pie, not a pierogi but along those lines. An assortment of tasty meats or veggies wrapped up in a cute pocket of pastry that isn’t too rich or overwhelming.

The Maria Empanada location in Stanley Market Place is a charming takeout counter. Fun music is playing, the display is inviting, and the servers are attentive. Selecting one from the many delicious choices is tough. My first selection had to be the Argentina, the country of origin of these little wraps. Inside the pastry, I bit into tender steak, eggs, red peppers and onions…. Scrumptious! Megan and Wendy tried the Caprese and the Chicken Classico that were fresh and had good flavor respectively. One is not enough! Another visit to the counter for more… including a sweet Empanaditas, the Banatella. A little two bite sized piece of heaven.

We walked away with a successful brainstorming session, filled to the brim with a tasty lunch from Argentina and another happy visit to Stanley Market Place. Oh, by the way, we actually made a third visit to the counter. Of course, we realized that Empanadas are perfect after school snacks or a fun breakfast on the weekend.
